포케 레스토랑을 디자인할 기회를 얻게 된 설계팀 VAUST Studio는 우리가 익히 알고 있는 전형적인 포맷에서 벗어나고자 했다.
이번 프로젝트는 팬데믹 시대의 식당이 어떻게 구성되는지에 대한 아이디어의 재평가에 관한 것이다.
그들은 동시 운영 가능한 좌석 수를 철저하게 줄이고, 마주 앉는 자리 간 거리를 늘렸다.
대부분의 좌석은 레스토랑 내에서 명확하게 관리할 수 있는 구조로 고정되어 있다.
손님들이 계산대에서 자유롭게 주문하고 나면, 주문서는 홀과 격리되어 있는 주방으로 전달된다.
자리에 앉아 대기하다가 안내에 따라 음식을 받으러 가는 식이다.
이 과정은 불필요한 북적임과 대기 상황을 피하는 효율적인 방식이다.
1907년에 촬영된 하와이의 어부 사진이 공간에서 중심 역할을 하며 디자인 콘셉트에도 영감을 주었다.
매우 기본적인 옷만 입고 바위에 앉아 있는 한 남자가 물고기를 잡을 장비를 준비하고 있다.
설계팀은 이 사진 속 상황의 친밀감, 균형감, 정직함을 고맙게 여긴다.
레스토랑의 홀은 친밀하고 의미 있는 경험에 대한 분위기를 전달한다.
서로 보완하고 있는 다각형의 콘크리트 테이블 두 개가 이 홀의 관심을 사로잡는 중심적 요소이다.
어부에게서 영감을 받은 설계팀은 노르웨이에서 가져온 절단된 화강암과 나무의 그루터기들로 앉을 수 있는 좌석을 만들었다.
이 의자들은 어부의 사진 속에서 발견된 바위의 질감을 반영하고 있다.
테이블은 거칠지만 쾌적한 표면을 가지고 있어 테라초 구조의 느낌을 준다.
다양한 색상의 반질반질한 바위가 실내공간에 자연스럽고 따뜻한 색상 팔레트를 더한다.
레스토랑이 가진 아이덴티티의 대표적인 부분이라 할 수 있는 인조 석재 조형물은 레스토랑에서
눈에 가장 잘 띄는 창문 앞에 배치되어 빙글빙글 돌아가며, 손님뿐 아니라 지나는 사람들의 눈길도 끌어들인다.
When the opportunity was presented to design a Poke restaurant, VAUST Studio decided to free from the typical format known already.
This project is about re-evaluating the ideas of how the restaurant is organised in times of a pandemic.
They strongly reduced the number of possible guests taking a seat at the same time and increased the distances of people sitting across from each other.
The majority of the seats are fixed to have a clear manageable structure within the restaurant.
The customers order at a free standing cash desk, and the order wheet is transfered to the kitchen separated from the hall.
The customers wait taking a seat, and go to pick up their food according to announcement.
The process is an efficient method to avoid unnecessary crowds and waiting situations.
A photograph of a Hawaiian fisherman from the year 1907 functions as a role model and gave inspiration for the design concept.
A man sitting on a rock with just the very essential bit of clothing on his body is preparing his
gear to go out and fish. The design team appreciates the intimacy, the balance and honesty of this situation.
